Hey Hungry DIYers!!
I don't know about you, but one of my favorite ways to eat chicken is in a quesadilla! A year or so ago I found a recipe that changed my life :) well kind of. I'm a picky eater and usually don't go outside of my comfort zone when it comes to food. At that point, the only way I had eaten avocado was when I went to Chipotle and asked for guacamole on my burrito.
Anyway, I'll get to the point :)
Here is what you need:
- Chicken breast. You decide how much you need depending on how many you want to make.
- 1/2 of an Avocado for 2-3 quesadillas depending on size.
- BBQ Sauce. I like Sweet Baby Ray's.
- Shredded Cheese. I tend to use ColbyJack or Mild Cheddar.
- Flour tortillas. Quantity and size is up to you.
- Total time after chicken is done is about 15 minutes.
Cook some chicken. I won't tell you how to cook your chicken because there are plenty ways of doing it. Depending on how I feel, I may bake, boil, or throw them on my electric skillet. Season it to your taste then shred it.
Preheat your oven on broil or 500 degrees.
On a cookie sheet, lay your tortillas in a row. On one side of the tortillas, place shredded chicken evenly. Sprinkle your cheese over the chicken. Slice your avocado from top to bottom thin enough for your quesadilla to fold flat on the cookie sheet. You don't want it dice or slice it too thick because your quesdilla will end up really lumpy. Place those slices on top of the cheese. Lastly, drizzle your BBQ sauce on top.
Fold the other half of your tortilla so it looks like a half circle and press firmly. Pop those on the top shelf of your oven for 2-3 minutes or until lightly brown and crispy. Flip and repeat on the other side.
Once done, cut into 2-4 sections and serve. I like to eat mine with sour cream but they are fine by themselves.
